The two outer layers are SUS 410, a new soft stainless steel alloy that is more resistant to rust and the hard core of the blade protects even better. Furthermore, the two outer layers SUS 410 produce a connection even stronger in the region of the weld between the handle and the blade of the knife. The core of the blade is made of the best material cromova Sanso 18, a stainless steel alloy consisting of 18% chromium, and a top secret composition of molybdenum and vanadium. With a hardness of 58-59 Rockwell, and the characteristic narrow grinding angle of 12.5 degrees, the knife has excellent cutting results, not only for use in professional kitchens, but also for private use. Another important innovation is the new ergonomic handle, which provides a hold position for the thumb.
